UHT MILK (Ultra-High Temperature Milk) - See Ultra-High Temperature Milk.

ULTRA-HIGH TEMPERATURE MILK (Ultra High Temperature Milk) - The term UHT milk may refer to milk that has been subjected to either Ultra-high temperature processing or Ultra-heat treatment.

These processes effect a partial sterilization of the milk by heating it at a temperature above 275 degrees Fahrenheit (135 degrees Celsius) for a short time, typically one to two seconds, which is enough time to kill any spores in the milk.

UHT milk is used by some coffee companies in their automatic brewers. For example, the Tassimo brewers that use T-Discs (Tassimo coffee pods) use UHT milk.

UNBALANCED - Describes a coffee with taste and aroma characteristics that are complex enough to be interesting, yet with one or more elements or qualities of the coffee dominating (overpowering, overshadowing or overwhelming) the other taste/aroma characteristics.

An unbalanced coffee's flavor will localize at one particular point on the palate (e.g., it is imbalanced toward one particular direction), possibly creating an undesirable taste characteristic (e.g. a taste fault/flavor defects).

UNCLEAN - An off flavor similar to a fermented taste yet without any pungent or rotting flavors. This unclean quality differs in different coffees depending upon their origin and how they were processed subsequent to harvest.

UNDEFINABLE FLAVOR - An off taste which cannot be categorized.

UNDER-EXTRACTED (Under Extracted) - Brewed espresso or coffee that has been subjected to an insufficient amount of extraction - exposure to hot water - and thus likely has very little body and is weak.
