The crema on top of the espresso retains the shot's fine flavors and aromatic qualities, and is comprised of emulsified oils in a very thin foamy layer that is golden brown in color. The crema contains sugars and proteins and hold the sweetness of the shot, balancing out bitterness in the heart at the bottom and body in the middle of the shot.
